Ingredients:

  1. 1 Tsp olive oil
  2. 4 oz lean ground turkey
  3. 1 garlic clove
  4. 1/8 tsp chilli powder
  5. 1/8 tsp ground cumin
  6. 1/8 tsp paprika
  7. 1 tbsp tomato sauce
  8. 2 Iceberg or Romain lettuce leaves
  9. 2 tbsp diced tomatoes
  10. 2 tbsp diced the red onion
  11. 1 tsp chopped parsley
  12. Salt
  13. freshly ground black pepper

Recipe:

Heat olive oil in a non-stick skillet over medium-high heat. Add garlic and add the ground turkey.

Cook, breaking up the turkey with a wooden spoon until cooked through. Add tomato sauce.

Add chilli powder, cumin, paprika, salt, and black pepper. Reduce to a simmer and cook about 5 minutes until the sauce has reduced.

Serve mixture over lettuce leaves.

Top with tomatoes, and red onion and parsley and serve.
