How to make Roasted Vegetable Frittata?

Confused with what veggie food to cook for dinner or lunch here we bring to you vegetable frittata. Not only this can be served at occasions but also on a regular day to day meal. This dish is a perfect source of healthy fats and protein and can relief you if you are bored with the regular vegetable dishes.

Ingredients:

  1. 1 red onion chopped
  2. 2 bell peppers chopped (one red, one orange)
  3. 1 yellow bell pepper chopped
  4. 1 small zucchini chopped
  5. 2 cloves crushed garlic
  6. 1 tablespoon avocado oil
  7. kosher salt and black pepper
  8. 12 pastured eggs
  9. 1/4 cup organic whole milk
  10. 2 ounces goat cheese
  11. 1/4 cup sliced scallions

Recipe:

Note Pre-heat oven to 425 degrees Fahrenheit. Grease a 913 baking pan with butter, coconut oil or cooking spray.
Place chopped onion, peppers, zucchini, garlic in a large bowl.

Drizzle with avocado oil and season with salt and pepper.

Toss everything together with your hands.

Transfer the veggies onto a rimmed baking sheet. Bake for 30 minutes, flipping the vegetables halfway through.

Remove veggies from the oven and allow to cool. Reduce cooking temperature to 350 degrees Fahrenheit.

Meanwhile, in a large bowl, take eggs.

Add milk, salt, and pepper. and whisk it.

Add cooled veggies to the egg mixture.

Transfer into prepared baking pan.

Top with dots of goats cheese and sliced scallions.

Pop in the oven and bake for 30 minutes or until the eggs have puffed up and are set through the centre.

Cut it into the desired shape and serve.
