Everyone is a fan of pie. No matter whether its parties or some get together the very common dessert that finds its place irrespective of any festive occasion is pie. Fun doubles when we actually make them and then serve them in the parties with our own blend of flavours and taste. So don’t rely on bakeries when you can easily make better homemade pumpkin pie and serve them in just few steps. All you need to is spare a few time and observe the detailed steps carefully and in no time there will be a pumpkin pie recipe ready just to be served to your friends and family. So here are the steps to make pumpkin pie at home:

Ingredients:

Crust

  1. ¾ cup whole wheat flour (all-purpose)
  2. ¾ cupcake and pastry flour
  3. 1 Tbsp sugar
  4. ½ tsp salt
  5. 10 Tbsp unsalted butter, cut into pieces and then frozen for 10 minutes
  6. 1 large egg yolk
  7. 3 Tbsp cold water
  8. 1 Tbsp lemon juice

Filling

  1. 2 cup pumpkin puree
  2. ½ cup packed light brown sugar
  3. 3 large eggs
  4. ¾ cup evaporated milk
  5. 1 ½ tsp finely grated fresh ginger
  6. ¾ tsp ground cinnamon
  7. ⅒ tsp ground cloves
  8. ⅒ tsp salt
  9. 1 egg whisked with 2 tbsp water, for brushing

Recipe:

First Pulse the flours, sugar, and salt to combine in a food processor.

Add the butter and pulse it in quick pulses until just small pieces of butter are visible, and the mixture as a whole just begins to take on a pale yellow colour.

Stir the egg yolk, water, and lemon juice together in a bowl.

And add this to the dough all at once, pulsing until the dough barely comes together.

Shape the dough into a disc by hand, wrap it with plastic bag and chill for at least 2 hours.

On a lightly floured work surface, roll out the dough to just under a ¼ inch thick.

Lightly dust a 9-inch pie plate (do not grease) and line the plate with the pastry, Trim the pastry off right to the edge of the pie plate.

press it down gently to secure. Keep it in the fridge while preparing the filling.

Take 2 cups of pumpkin puree in a bowl.

Add brown sugar and eggs.

Mix it well.

Add evaporated milk, grated ginger, cinnamon, clove, and salt. and mix it well.

Pour this into the chilled pie shell.

To create the trim, roll out the remaining pie dough into a long rectangle and cut into strips about 1/3-inch wide.

Lightly brush the edge of the pie dough with the egg wash.

Braid three strips together, gently pulling the dough a little to stretch it as you braid it.

Put the strips on the edges of the pie plate and brush with egg wash.

Make some leaves from the dough give it design like leaves with a knife.

Place the pie onto a baking tray and bake the pie for 10 minutes at 400 F, then reduce the oven temperature to 375 F and bake the pie for another 35 to 40 minutes.

After backing it will look like this.

Decorate with leaves, Cool the pie to room temperature, then chill completely, about 4 hours, before serving.

Tip:

The pie is best served chilled and can be stored, refrigerated, for up to 2 days.
