- 1 medium tomato chopped

- 1/4 cup quinoa uncooked
- 1 tsp olive oil

- salt and black pepper
- 1/8 tsp dried oregano
- 2 medium red bell peppers
- 1 tbsp parmesan cheese
Bring the quinoa and water to a boil.
Cover and simmer until the liquid is absorbed and the grain looks translucent 12 to 15 minutes.
Heat 1 tsp olive oil in a medium frying pan, add garlic,
Then add courgette, onion and cook and cover until soft.
uncover and add, tomato, salt, pepper, chilli powder, dried oregano.
Now add quinoa and combine everything.
Cut the top off of each pepper and remove the seeds and ribs.
Fill each pepper with the quinoa and vegetables.
Then top each pepper with 1/2 tbsp parmesan cheese.
Transfer to a baking dish. Bake for 20 minutes, until softened.
