Ingredients:

  1. 1 (7 lb.) Rib Roast, Bone-In, or Boned & Tied
  2. 2 tbsp. oil
  3. 1 clove garlic
  4. Salt
  5. Pepper, freshly ground

Recipe:

Take veggies in a baking tray.

Place roast in a shallow baking pan. pour beef broth and red wine in the pan.

Heat oil in a small saucepan.

Add garlic and salt and pepper. Mix well.

Brush over roast, and let stand at room temperature for 2 hours.

Sprinkle salt and pepper on top. Preheat oven to 450°F. Roast for 10 minutes in an uncovered pan, then reduce heat to 350°F and continue for 1 hour and 20 minutes for rare. Baste with pan drippings from time to time.

Roast 15 minutes more if you want a medium roast, another 15 minutes for well done.

Allow the meat to rest for a few minutes before carving. Remove veggies and drain out the sauce.

Put the sauce in a pan.

Add flour and mix it well.

You can add salt, pepper if required, cook till thickens.

Slice roast into thin pieces.

Pour the sauce on top and it is done. serve with browned potatoes.
